We often make many recipes for a new mother like gond ladoo, gond paag, makhana ka paag, harira and a speacial panjiri.
While making panjiri we use palash gond and it is known as kamarkus.
Kamarkas is very beneficial for new mother as it helps recover the mother after delivery.
Today we will make panjiri for new mother.
Let’s see what ingredients are required for making panjiri.
Wheat flour - 1 cup (100 grams)
Dry Coconut - ½ cup (grated)
Jaggery khand - ¾ cup
Ghee - ¾ cup
Gond (consumable) - 2 tbsp
Cashew nuts - 2 tbsp (10-12)
Almonds - 2 tbsp (15-20)
Melon seeds - 2 tbsp
Green cardamom - 5
Carom powder - 1 tsp
Cumin powder -1 tsp
Ginger powder - 1 tsp
Apricot - 4-5
Pistachios - 1 tbsp
Kamar kass - 1 tbsp
Firstly add ghee in a pan. When ghee gets hot fry the dry fruits
Add half the amount of ghee in pan and firstly fry the Gond. If Gond is in large pieces then break it into smaller pieces.
When ghee gets medium hot place Gond in the pan and fry on low flame
Don’t fry on high flame. Gond has become puffy.
Take it out in a plate. Take one piece and crush it to see whether Gond is cooked properly or not.
Make sure it is cooked properly. If added in very much heated ghee then it will remain raw from inside.
Fry rest of the Gond too.
Now fry almonds on low flame and take it out in a plate.
Fry all cashew nuts like wise for just 1 minute and take them out.
Fry pistachios for 1 minute on low flame as well.
Roast apricot or walnuts for 1 minute and take them out in a plate.
Place melon seeds in the pan and let them crackle.
If the seeds crackle a lot then cover the pan like this with any lid.
Now fry kamar kass as well and take it out.
Keep the flame low for frying all these ingredients.
Now add ginger powder, cumin powder, carom seeds powder and grated coconut in
the same pan and roast for 1-1.5 minutes only on low flame. Keep stirring.
Roast until you get to smell good aroma from it.
Spices are ready; take them out in a plate.
All ingredients are ready. Now roast the flour.
Add rest of the ghee in the pan.
When ghee starts melting add wheat flour into it.
Keep stirring constantly and cook on medium flame until it gets brown color.
Make sure the flour doesn’t stick to the pan.
Flour is roasted nicely.
Turn off the gas and keep stirring.
Now mix all ingredients.
Grind the dry fruits before mixing them.
Add dry fruits and kamar kass in mixture grinder and make powder.
Take out powdered dry fruits in a big bowl.
Mix the jaggery khand as well.
You can also use brown khand or grinned sugar or powder. Use whatever is available.
Jaggery khand is very beneficial.
Add coconut, spices and fried melon seeds in the bowl.
You can increase or decrease the value of khand accordingly.
Remove whatever dry fruit you don’t like eating and add preferred ones.
Take out the flour in a bowl so that it gets cooled completely.
If we add warm flour, the khand will start melting.
Add flour, green cardamom powder in the bowl and mix all ingredients very nicely.
All ingredients are mixed nicely. Special panjiri for new mom is ready.

If panjiri is tasting dry and you wish eating something
soft then make halwa from this panjiri instantly.
Let's see how to make halwa from panjiri.
Take 2 tbsp panjiri and add milk in the pan.
Turn on the gas and cook until it gets thick consistency.
Keep stirring until it gets thick consistency.
Halwa is ready and is not sticking to the pan.
Turn off the gas and take it out in bowl.
Halwa for new mother is ready.
It can be stored fro 3 months if kept in an air tight container.
Give 2-3 tbsp panjiri to a new mother as it provides energy and makes her healthier.
