Frankie Vegetable Kati Roll Recipe -

Today we will make vegetable Frankie.
These are also known as kathi roll or roti roll.
Kids do not like eating plain roti but if you make them these
vegetable Frankie rolls to eat they will surely love to eat it.
Let’s see what all ingredients are required for making vegetable Frankie roll.
Wheat flour - 1 cup
Maida- 1 cup
Desi ghee - 2-3 tbsp
Oil- 2 tbsp
Salt - ½ tsp
These ingredients are required for making dough.
These ingredients will be required for making stuffing.
Capsicum - 1
Tomato - 1
Paneer - 200 grams
Cabbage - 100 grams
Green peas - 1 cup
Oil - 2 tbsp
Green coriander - 2 tbsp (finely chopped)
Ginger - 1 inch piece (grated)
Green chilly - 1 (finely chopped)
Coriander powder - 1 tsp
Asafoetida - 1 pinch
Cumin seeds - ½ tsp
Red chilly powder- less then ¼ tsp
Turmeric powder - ¼ tsp
Salt - more then ½ tsp (as per taste)
Knead dough first for making vegetable Frankie.
Mix maida, salt and oil in wheat flour.
Mix all ingredients really well.
We can also make vegetable Frankie by using only maida.
Add little amount of lukewarm water and knead soft dough.
We have used less then 1 cup of water.
Cover the dough for 20 minutes for fermenting.
Meanwhile prepare stuffing.
Cut cabbage into thin slices.
Turn on the gas.
Like wise slice capsicum into thin slices.
Remove seeds and stalk.
Chop the tomato finely.
Add half of the oil in heated pan.
Add green peas into pan and cook until they become little tender.
Cover and cook for 1 minute.
Cut paneer into small chunks.
Peas have become tender; take them out in a bowl.
Add capsicum and cabbage and cook for 2 minutes until they become tender.
Take them out in a bowl.
Add rest of the oil in pan.
Also add cumin seeds, coriander powder, asafoetida, turmeric powder, tomatoes, green chilly and ginger.
Add chilies as per your taste.
Also add red chilly and cook until tomatoes get mashed properly.
Oil has started separating and masala is ready.
Now add paneer chunks and salt.
We are using cabbage, peas and paneer for making stuffing, but you can use any vegetable of your choice.
You can use carrot, beans, cauliflower or which ever you like.
Also add all vegetables and mix all ingredients nicely.
Add green coriander as well.
Mix all ingredients nicely.
Stuffing is now ready.
Turn off the gas and take out vegetables in a bowl.
Take little amount of dough in your hands and make round ball from it.
Roll it thinly.
Dust it with dry maida or wheat flour.
Roll into 10-12 diameter circle.
Roll it from corners so that it doesn’t get thin from the center.
Now place the roti on heated tawa.
Flip the side as it is roasted from beneath.
Roast until it gets brown spots on the other side as well.
Now roast it directly on the flame.
Don’t make the roti too crispy as we have to make roll from it.
Spread some ghee on the roti.
If children like eating paranthas then instead of making roti make parantha.
Spread some ghee on the roti and flip side.
Spread ghee on the other side as well.
Don’t make it too crusty.
With this much quantity of dough we can make 7-8 paranthas.
Spread 1/2 tsp of chutney over roti.
Place the stuffing on the roti like this.
Fold it like this and close the roll.
Insert a tooth pick or wrap it in foil.
Vegetable Frankie is ready.
Piping hot vegetable Frankie roti parantha roll is ready.
